Stability of a metal atom in a particular oxidation state depends upon factors other than half filled and full filled orbitals. That hapens to be the most important one though.
Ionisation energy, ΔH sublimation & enthalpy of hydration(in soultion formation) etc are some of the other factors.
These and a few more factors in total over-weigh the other factors for Cu+ - > Cu2+ transition
Hence this is possible!
